Technology behind Proxy Server

I have been developing a new proxy and therefore I did some research in the technology behind the proxy server. I just want to give a simple overview on how the proxy works. Well, some proxy sites use to gather proxy severs and list them in their website. Proxy site and proxy servers are totally different but people use them as same words.
In proxy sites, you will find list of proxy servers by using which you can surf the internet anonymously and in proxy server you can surf directly by using their servers. A proxy site is sometimes useful than finding a proxy server because if you find a new proxy sites, then you will find many new proxies because they collect the database of proxy servers. But if you find a proxy server, then you will find only one proxy server.
If you are surfing the internet through proxy, then you are surfing the internet anonymously because nobody can see your real IP address. It is through the IP address that people in the internet can track the other computers. But if you are using a proxy server, then they will get the IP address of the proxy server and not yours.
